Melted brie with roasted green asparagus in a crispy puff pastry jacket. How amazing does that sound! And with a drizzle of honey, lemon & thyme sauce, this is one amazing summery lunch dish!

Brie And Asparagus Stuffed Puff Pastries With Thyme & Lemon Honey
Ingredients
- 1 bunch green asparagus, ends trimmed (± 20 pieces)
- 1 tbsp olive oil
- Pepper & Salt
- 4 Puff pastry squares (defrosted)
- 150 g brie
- 1 egg, beaten
- Pinch of nigella or sesame seeds (optional)
- Thyme-Lemon Honey
- 1/4 cup honey
- 2 tablespoons salted butter (or add salt if unsalted butter)
- 1 tablespoon fresh thyme leaves
- Zest of 1 lemon
Instructions
Preheat the oven to 200°C and line a baking sheet with baking paper.
Drizzle olive oil over the asparagus and toss with pepper & salt to coat.
Place the 4 puff pastry sheets on the baking tray and place a few good slices of brie diagonally on the puff pastry.
Top with the asparagus and fold the 2 sides together to make a parcel (see example).
Brush each parcel with the beaten egg and sprinkle over some nigella or sesame seeds if using.
Place in the oven and bake for 20 - 25 minutes until the puff pastry is nice and browned.
In the meantime make the sauce: add all the ingredients into a small saucepan and let it all melt and combine on low heat. When the butter is melted remove from the heat.
Serve hot with the honey sauce drizzled over the top!
