We’re having a few hot days and nothing better than a refreshing iced tea to help quench your thirst. This recipe is inspired by @foodfromclaudnine
I tried a few teas, but some turned out too bitter. When I tried Verveine I knew this was the one! The citrussy, floral flavour works perfectly for a cold drink.
Sparkling Verveine Iced Tea with Rosemary infused Honey
Ingredients
- Syrup
- 50 ml water
- 50 ml honey
- 2 rosemary sprigs
- Tea
- 1 liter water
- Handful verveine leaves
- To serve
- Ice cubes
- Rosemary sprigs
- Sparkling water
- Slices of lemon
Instructions
Syrup
In a small saucepan add 50 ml of water, 50 ml of honey and 2 rosemary sprigs.
Bring to a boil and let simmer for 30 seconds, then take off the heat and let steep for at least 30 minutes (I made it the day before).
Tea
Boil 1 liter of water, pour this in a teapot over a handful of verveine leaves.
Let steep for 30 minutes. Discard the leaves and let cool further until you can pour it into a jug.
Place this in the fridge and chill for a minu=imum of 30 minutes.
Serve
To a tall glass add 4-5 ice cubes and a drop or 2 of the syrup (how much is up to you).
Pour the chilled tea until ± 3 cm under the rim of the glass and top off with sparkling water.
I like to add a slice of lemon and stir it all together with a rosemary sprig.
