Vegetarian Aubergine Lasagne

Silky smooth and charred roasted aubergines layered with a classic tomato sauce and lasagne leaves, topped with cheesy mozzarella mixed with bread crumbs. Super healthy and super comfy.

Ok, I know, not real shoarma, but my healthier version of shoarma. And the star if the show? Roasted lemon! This is my new addition, roasting, grilling or pan frying lemon until charred and caramelised and then squeezing out the juices. So so good!

Hungarian Meatball Goulash Soup

A hearty stew rich with peppers, tomatoes and potoatoes and flavoured with smoked paprika and caraway seeds. This is a quicker version of a classic goulash soup in which you cook steak cubes slowly for a few hours. The meatballs are first seared off and browned on all sides until 80% cooked through then set aside. The soup is made in the same pan and the meatballs are placed back for the last 15 minutes to cook through.

Served with fresh parsley, dollops of yoghurt and fresh crust bread and you've got one hell of a soup!

Smashed Crispy Roasted Parsnips

Oh yay for autumn! Yay for root vegetables. Sweet, savoury, earthy goodness, I just can’t get enough!

These parnsips are first parboiled, then roasted and THEN smashed and roasted again. Resulting in ultra fully insides and crispy caramelised edges. These really are next level.

I served them with a yoghurt, mayo mint dip, a simple beetroot coleslawy and pan seared chicken thighs.

Smashed Jerusalem Artichokes with Crispy Capers, Creamed Spinach, Hot Smoked Salmon and a Poached Egg

Wow what a mouthful as a title! But wow what a mouthful in flavour! Just great combinations: earthy crispy Jerusalem artichokes, pan fried in butter and topped with little crispy zingy capers to counterbalance the butter, a great contrast! Spinach, egg and salmon are a separate match made in heaven, but all together you have one hell of a dish.

I made the creamed spinach myself but feel free to use the frozen ready made kind if you’re in a rush. Then you pretty much just need to make the Jerusalem artichokes (± 20 minutes), boil or poach an egg and lightly warm up the salmon. It can all be on the table within 20 Minutes!

Also great with garlic sautéed cavolo nero by the way!

Easy Pumpkin & Ricotta Gnocchi with Brown Butter Crispy Sage (and Sautéed Kale and Mushrooms)

Sweet, savoury, silky, fluffy, crispy little pillows, these gnocchi have it all! Combined with brown butter crispy sage, we all know this is a match made in heaven! It doesn’t take a huge amount of time to make but in my opinion definitely a weekend dish. But!... You can also just make a big batch of the gnocchi and freeze them and then they make a great easy and quick weeknight dinner. So winners all around! I also added a dollop of ricotta over the gnocchi when serving but I forgot to photograph it ;-)

I also sautéed some cantharel mushrooms with kale and garlic, but a simple side salad would be perfect too.

Charred Red Bell Pepper Lentil Soup

Hmmmmm, roasted peppers. Amazing how much the flavour and texture changes of a bell pepper by charring it on a flame. And it could’t be easier, just turn up the gas flame to high and lay the pepper on the flame. When one side has charred, rotate it with a pair of tongs, until all sides have charred.

When done, seal it in a tupperware box and let is steam. (It’s often also steamed in a plastic zip lock bag but I find this such a waste of plastic). After ± 5 minutes the blackened skin will just fall off easily. Sooooo good! Add this to a soup or leave it as is, and marinade in olive oil, red wine vinegar and some torn basil leaves. Hmmm, good idea, I might actually make that this week!

Baked Pumpkin, Chickpeas and Chorizo with Marinated Kale & Feta

If you like one-pot recipes then you’ll love Donna Hay’s (@donna.hay) cookbook ‘One Pan Perfect’. I flagged almost all of the recipes in the book to make ‘soon’, haha it will take months to make them all. Anyway, back to the dish. It really is super easy, everything is coated in honey, smoked paprika, olive oil, pepper and salt and then roasted for 35 minutes, adding the chorizo sausage for the last 15 minutes to crisp up. I used dry chorizo as I couldn’t find the fresh ones on a Sunday, but it worked great!

The kale is then massaged for 2 minutes with the the same marinade but also some sherry vinegar added. Massaging the raw kale softens the leaves but keeps the fresh green flavour. Such a great combo! A smokey, salty, sweet and tangy dish topped off with creamy goats cheese, yeah baby!

If you’d like to keep it vegetarian or vegan, then you can replace the chorizo with a vegetarian sausage and the feta with a dairy free option. The heroes of this dish are the roasted pumpkin coated in smoked paprika and honey and the yummy massaged kale!

The great thing about this recipe is that pretty much any vegetable will work. Last weekend at @plukcsafruittuin I harvest celeriac, carrots, leeks and escarole (andijvie in Dutch) and these all went in. Yum, what a flavour bomb! Would also be delicious with smokey bacon as an extra flavour addition!

Sticky Date Toffee Pudding with Butterscotch Sauce

Oh boy, this is dangerous. I've been wanting to make it for so long bit didn't want to have anything so ridiculous at home just for the 2 of us, so I had to wait for friends to come over for dinner.

Soft, fluffy, warm, date cake, ice cream melting over the top drizzled with a salted butter scotch, what a decadent dessert!

The cake by itself is really really good, you can just it it like that if you want. I saved 6 slices in the freezer for when we have a sweet tooth. But together with the cold ice cream and the warm sauce.... Like I said, dangerous.

Tortilla de Patatas

I know, I know, summer is no longer here but that doesn’t mean that some summery dishes aren’t still great when the weather gets colder! Like this Spanish potato omelette for example: Perfectly soft potatoes with slowly caramelised onions and eggs. Yum!

The trick to this dish is slooooow cooking: slowly cook the onions in a ton of olive oil, then slowly cook the potatoes in the same oil, then combine both with eggs and season and slowly pan fry (in 2 tbsp police oil) on one side, flip and repeat on the other side. Like I said, sloooow.

You do need a ton of olive oil for this to confit the onions an potatoes but don’t worry, you can reuse the oil after you’re done!
