Prep Time: 5 minutes Cooking Time: 25 minutes Total Time: 30 minutes

Ingredients

  • 1 bunch green asparagus, ends trimmed (± 20 pieces)
  • 1 tbsp olive oil
  • Pepper & Salt
  • 4 Puff pastry squares (defrosted)
  • 150 g brie
  • 1 egg, beaten
  • Pinch of nigella or sesame seeds (optional)
  • Thyme-Lemon Honey
  • 1/4 cup honey
  • 2 tablespoons salted butter (or add salt if unsalted butter)
  • 1 tablespoon fresh thyme leaves
  • Zest of 1 lemon

Instructions

1

Preheat the oven to 200°C and line a baking sheet with baking paper.

2

Drizzle olive oil over the asparagus and toss with pepper & salt to coat.

3

Place the 4 puff pastry sheets on the baking tray and place a few good slices of brie diagonally on the puff pastry.

4

Top with the asparagus and fold the 2 sides together to make a parcel (see example).

5

Brush each parcel with the beaten egg and sprinkle over some nigella or sesame seeds if using.

6

Place in the oven and bake for 20 - 25 minutes until the puff pastry is nice and browned.

7

In the meantime make the sauce: add all the ingredients into a small saucepan and let it all melt and combine on low heat. When the butter is melted remove from the heat.

8

Serve hot with the honey sauce drizzled over the top!
