Welllll, sauce might not be the right word. After the tomatoes have roasted for about 40 minutes, you’re left with blistered tomatoes swimming in their own liquid gold, this is pretty much it. No blending, or sauce making actually happens. The juices are truly to die for.
There are so many ways to serve this sauce: tossed with your pasta of choice, dip ip the juices with some bread, serve it with some whipped lemon feta. So many choices!
Super Easy Oven Roasted Tomato Sauce
- 500 g cocktail tomatoes (the ones slightly bigger than cherry tomatoes)
- 4-5 garlic cloves, left whole and peels on
- ± 2 tbsp olive oil
- Handful fresh oregano and / or roughly torn basil leaves
- Pepper & Salt
Preheat the oven to 200°C.
Halve the cocktail tomatoes, add a few cloves of garlic, toss in a good glug of olive oil, season with pepper and salt, and place in the oven.
Roast for 30 minutes.
Sprinkle some fresh oregano and or basil and roast for another 10 minutes.
Et Voilà! Sauce done!
Serve with pasta, gnocchi or fresh crusty bread for example, it's up to you!
You can also add a few pieces of lemon peel at the beginning, give great flavour to the sauce!
