I love making a curry, also when I'm slightly hungover from a wedding the day before. I know not everyone will choose to cook then but I really enjoy it. as long as it's easy, doesn't have too many steps and has all the comforting flavours you need on a day like that. Spicy food always hits the spot.

This chicken jalfrezi is loaded with vegetables and packed with flavour. It tastes just as good (maybe better) than takeaway.

Roasted Beets and Pickled Herring Salad on Toasted Roasted Beets and Pickled Herring Salad on Toasted Sourdough Bread

This little magenta coloured gem paired with the silvery skin of the herring is such a tasty, easy and healthy dish. Perfect for the warm summer days that are on their way again. 

The beets are roasted whole in their skin, rubbed in some olive, pepper and salt. The pickled herring I got at the fish store but you can also just get it in a jar at the supermarket (at least, in The Netherlands you can!).

We had this for lunch on our balcony the other day, but it would be great as an starter or even on a crostini as hors d'oeuvres.

I wish this was a prettier dish, I couldn't get it to look better but man oh man this was gooooood! 

It's salty, sweet, tangy, juicy and then in combination with charred vegetables? Ooh la la!

The recipe is inspired by the lovely @nataliechassay and I'll be making it again!

The great thing is, I'm already thinking of ways to tweak it or add different flavours. Anchovies for example! I'm adding those to the leftover dressing tonight to see how it turns out. 

Anyway, here's the recipe for the dressing:
* 8 pitted dates, very finely chopped
* 2 small shallots or 1 small red onion, finely diced
* Around 80 ml extra virgin olive oil
* Juice and zest of 1 lemon 
* Big handful of finely grated Parmesan
* 1 tbsp finely chopped fresh rosemary
* Salt, to taste
* Pinch of chili fakes

How to make it:
Mix it all together, whisk well so the oil and acidity of the lemons emulsify it all into a silky (but of course chunky) texture.

Use in any salad, on grilled vegetables, as a bread dip. It's up to you!

Chickpea Panzanella with Crispy Fried Courgettes Chickpea Panzanella with Crispy Fried Courgettes

It feels like summer, while it's actually still spring! When it's this warm you need 1: refreshing and light food and 2: easy recipes. Nobody wants to be hanging over a hot stove for too long when it's 30+°C degrees. So in comes this great Italian dish: Tuscan Bread Salad aka Panzanella. 

My recipe is based on the authentic recipe (inspired by @seriouseats ) but with a few of my own additions to add extra veggies, fibre and proteins. 

The chickpeas fill up the salad making it into a main meal and the crispy fried courgette add extra veggies and bite. 

Not in the mood for frying the courgette? Slice the courgette into thin strips and add them raw. They will soak up the tomato dressing and all the other flavours.

It's waaaaarm! And then we need refreshing dishes, like this great little zingy starter. 

This Sea Bass Ceviche with Mango & Koriander is an easy starter to make ahead of time, so great when having friends over for dinner. Super easy and quick to throw together for a dinner but still with a bit of a wow factor.

Ceviche is originally a Peruvian dish, a while ago I got a cookbook, Mi casa Peru created by @cevicheceviche Lansink Dodero, it’s great for inspiration!

Spiced Red Lentil & Coconut Soup This is not a pa Spiced Red Lentil & Coconut Soup

This is not a particularly spicy soup, but has just enough umph to give you a little kick. I was quite surprised by all the flavour this simple soup had actually, it’s definitely a keeper! I served it with some fresh coriander, feta (leave out if you want to keep it vegan) and grilled sourdough bread. Also great with flatbread, homemade or store bought and pimped up. Yum!

This isn’t a blended soup, so I would recommend to chop everything as finely as possible. Of course, if you still think the texture is a bit too lumpy at the end you can always give it a quick blitz with a hand blender (just a few pulses though)
