Easy 3 Ingredient Raspberry Coulis

A deep red & rich raspberry coulis to drizzle on desserts, stir through yoghurt or maybe even use to make a vinaigrette for a salad. This is one little condiment you need in your repertoire!

Add the frozen raspberries and the powdered sugar to a blender. Let it sit there for 5-6 minutes to defrost a little bit and then blend until smooth.

Ingredients

  • 450 g frozen raspberries
  • 1-2 tbsp lemon juice
  • 3 tbsp powdered sugar

Add the frozen raspberries and the powdered sugar to a blender. Let it sit there for 5-6 minutes to defrost a little bit and then blend until smooth.

Taste and add a little lemon juice at a time to your liking and mix again well.

For a smoother result set a sieve over a jug and pour the mixture into it. Push through the liquid using the back of a large spoon. Discard the seeds.

The coulis will keep for 3-4 days in an airtight container in the fridge.
