I love the simplicity of this salad, it’s super easy and super quick, but definitely delivers in flavour. As a salad just by itself it might not be filling enough, but a great side dish, for example with pasta dishes, pizza’s or at a BBQ.
Ribboned Courgette Salad with Lemon Zest & Parmesan
- 1 large courgette
- Juice of half a lemon, more to taste
- Zest of half a lemon, more to taste & serve
- 1-2 tbsp olive oil
- Pepper & Salt
- 1 tbsp parmesan, grated, more to taste
- ± 1 tsp of honey, optional
Wash the courgette and chop off the ends.
With a vegetable peeler or a mandolin shave the courgette into thin strips. Discard the pips in the center.
Add the strips to a large bowl.
In a sealable jar add the lemon juice, lemon zest and olive oil. Seal jar and shake well.
Taste and season with pepper and salt
If you like you can add a drop of honey to make it sweeter, I find it depends on the main dish it accompanies, it's up to you.
Taste and adjust to your liking.
Pour the dressing over the courgette and toss well, coating the courgette on all sides. I like to use my hands for this.
Serve in a nice bowl and sprinkle with parmesan and some extra lemon zest.
