One Pot Coconut Chicken Rice with a GAME CHANGING One Pot Coconut Chicken Rice with a GAME CHANGING SAUCE!

I LOOOOVE one pot dishes: you can tidy up the kitchen while it’s cooking and hardly any washing up afterwards. My kind of cooking! Not only is this One Pot Coconut Chicken Rice super easy, it’s absolutely delicious. The rice is cooked in the chicken stock and coconut milk, so it’s creamy and fluffy at the same time. Don’t let the simple ingredients deceive you: lime zest and juice, ginger, Thai green chilis, garlic, shallots, spring onions and koriander are all you need to get tons of flavour.

I now added the Thai drizzle sauce at the end. In my honest opinion that was missing in the previous version of the recipe. It’s zingy, spicy, sweet and salty, perfect in combo with the rich coconut rice. This was really a game changer!

Yes yes yes, a super pretty and festive cake to bring to a tea party or brunch. I love the combination of the sour cranberries and the sweet cake and of course drizzled with a simple but delicious orange icing. I added some toasted almonds to look pretty but they also turned out to be a great flavour combo!

Chinese Chicken & Cashew Stir Fry – quick, vibrant, and packed with flavour! Stir-fries are one of my favourite ways to pack in loads of veggies while keeping things easy, fresh, and delicious. This dish comes together in no time, with tender chicken, crunchy cashews, and a rich, savoury sauce that coats everything beautifully.

Today for the veggies I used mushrooms and cabbage, both I still had lying around in the fridge.

This Chinese Chicken & Cashew Stir Fry was inspired by the amazing @recipe_tin, with just a few tweaks – I added honey for a touch of sweetness, plus ginger and chilli for extra warmth and spice. The result? A perfectly balanced stir-fry that’s rich, nutty, slightly sweet, and full of bold Chinese flavours.

Serve it over steamed rice or noodles, and you’ve got a better-than-takeout meal in under 30 minutes!

It’s been a busy few months and even though I’ve s It’s been a busy few months and even though I’ve still been cooking almost every night, the idea of trying new recipes, writing them out, photographing them, and posting them daily was just… too much. I hit a bit of a rut, cooking-wise. My photography gigs (@saffronpape ) have been amazing—energizing and inspiring—but they’ve also pulled a lot of that creative energy away from the kitchen. So I stuck to my tried-and-true dishes: simple, easy, tasty, and very familiar.

That said, it’s not like I haven’t documented anything at all. I do have a handful of dishes from the past months that I managed to capture: Thai chicken meatballs, a Massaman curry with those same meatballs, roasted chickpeas with aubergine, a Palestinian carrot cake with rosewater cream and pistachios, coconut water chicken, Thai peanut salad, broccoli mac & cheese, slow-cooked shredded beef chili, marinated feta, stuffed peppers, sweet potato fries, fennel & white bean chorizo stew, peanut butter fish curry… the list goes on.

Anyway—I think I’m back. My photography schedule has calmed down to a few shoots a week, and these wintery days are making me feel cozy and ready to cook again, glass of wine in hand and music in the background.

Rendang Ayam Padang – Coconut Chicken Rendang! If Rendang Ayam Padang – Coconut Chicken Rendang! If you know me at all you know I’m nuts about Indonesian food. We’ve been there on many travels and mainly the food keeps bringing us back. Rich, bold, spicy, packed with flavor—Indonesian cuisine just hits different. Every bite feels like a perfect balance of heat, sweetness, and deep umami.

This is a Padang style chicken rendang, originally from West Sumatra. I usually make beef rendang, slow cooked beef in a thick coconut gravy. Yum! but when you’re in a bit of a time squeeze chicken rendang is a great alternative and oh so tasty! With a few basic Asian ingredients in your pantry or freezer you can easily create this dish on any week day.
