    Lunch

My ideal lunch is easy, quick, healthy, full of flavour and preferably with the least amount of washing up.

  • Super Crispy Smashed Potatoes

    Side

I live for sides. In my opinion sides can be the star of the meal, so actually there is no thing as sides, just perfectly made little meals.

  • Italian mackerel tartaar with horseradish mayonnaise

    Starter

I usually only make starters when I’m having friends over for dinner. They are an introduction to the meal and can set the tone of the rest of the dinner. In my book an important course!

Super Easy no Sugar Cranberry & Forest Fruit Jam Super Easy no Sugar Cranberry & Forest Fruit Jam

Well this was ridiculously easy, I should have tried this way earlier! Where we can we're trying to cut down on sugar. Not for the calories per se but processed sugar in itself is really not that good for you. So where I can I substitute with dates, dried fruits and of course my all time favourite: honey! (it also helps that I'm a beekeeper and we have liters of the stuff ;-)

Cranberries are naturally high in pectin, that ingredient that helps jam to gel into that jammy consistency. No additional gelling agents needed, I had no idea! I citrus peels are also high in pectin (saw a youtube video somewhere).

I also had half a bag of frozen forest fruit way way back in the freezer (hence the frozen clump of fruit in the picture) so I decided to throw that in as well.

To a small sauce pan I added:
> 200 g frozen cranberries (can also be fresh)
> 200 g other (frozen) red and black berries
> 1 star anis
> 1 cinnamon stick
> A few orange peels (not the white part)
> 1 tbsp water to help it along
> after cooking you add honey, see explanation below.

Bring to a simmer and let bubble on low heat for 10 minutes. Keep an eye on it or it will foam over if the heat is too high (I found out the hard way).

Then take of the heat and let cool down for a 5 or so minutes. Now you can add your honey, I used about 4 tbsp but feel free to adjust to your liking.

A few points about the honey:
> Why not add it while cooking?
If honey gets heated about 50°C it loses all the beneficial enzymes and nutrients. (this also counts for tea by the way, don't add honey too soon!)

> Why is it good to use honey?
Honey helps preserve jam due to its low water content and acidity, acting as a natural preservative. So yay!

This jam will keep for 2-3 weeks sealed well in the fridge.

We use it on pancakes, in yoghurt, on toast, with cheese boards. You name it, we use it!

Dille Packed Salmon Burgers with Pickled Onions & Dille Packed Salmon Burgers with Pickled Onions & Caper Yoghurt Mayo

Juicy, herby, zesty fish burgers in a fingerlicking good sauce with sweet & sour pickled red onions! Yeah baby!

These little salmon wonders are inspired by @theoriginaldish. I used a mix of salmon and tilapia fillets (because the salmon is quite pricey at the moment), which worked great together! O served it with roasted potatoes and broccoli and cabbage coleslaw, quite a nice meal I hop for my the woman I cook for at @thuisgekookt!

One Pot Coconut Chicken Rice with a GAME CHANGING One Pot Coconut Chicken Rice with a GAME CHANGING SAUCE!

I LOOOOVE one pot dishes: you can tidy up the kitchen while it’s cooking and hardly any washing up afterwards. My kind of cooking! Not only is this One Pot Coconut Chicken Rice super easy, it’s absolutely delicious. The rice is cooked in the chicken stock and coconut milk, so it’s creamy and fluffy at the same time. Don’t let the simple ingredients deceive you: lime zest and juice, ginger, Thai green chilis, garlic, shallots, spring onions and koriander are all you need to get tons of flavour.

I now added the Thai drizzle sauce at the end. In my honest opinion that was missing in the previous version of the recipe. It’s zingy, spicy, sweet and salty, perfect in combo with the rich coconut rice. This was really a game changer!

Cranberry & Orange Bundt Cake Yes yes yes, a supe Cranberry & Orange Bundt Cake

Yes yes yes, a super pretty and festive cake to bring to a tea party or brunch. I love the combination of the sour cranberries and the sweet cake and of course drizzled with a simple but delicious orange icing. I added some toasted almonds to look pretty but they also turned out to be a great flavour combo!

Chinese Chicken & Cashew Stir Fry Chinese Chicken Chinese Chicken & Cashew Stir Fry

Chinese Chicken & Cashew Stir Fry – quick, vibrant, and packed with flavour! Stir-fries are one of my favourite ways to pack in loads of veggies while keeping things easy, fresh, and delicious. This dish comes together in no time, with tender chicken, crunchy cashews, and a rich, savoury sauce that coats everything beautifully.

Today for the veggies I used mushrooms and cabbage, both I still had lying around in the fridge.

This Chinese Chicken & Cashew Stir Fry was inspired by the amazing @recipe_tin, with just a few tweaks – I added honey for a touch of sweetness, plus ginger and chilli for extra warmth and spice. The result? A perfectly balanced stir-fry that’s rich, nutty, slightly sweet, and full of bold Chinese flavours.

Serve it over steamed rice or noodles, and you’ve got a better-than-takeout meal in under 30 minutes!

It’s been a busy few months and even though I’ve s It’s been a busy few months and even though I’ve still been cooking almost every night, the idea of trying new recipes, writing them out, photographing them, and posting them daily was just… too much. I hit a bit of a rut, cooking-wise. My photography gigs (@saffronpape ) have been amazing—energizing and inspiring—but they’ve also pulled a lot of that creative energy away from the kitchen. So I stuck to my tried-and-true dishes: simple, easy, tasty, and very familiar.

That said, it’s not like I haven’t documented anything at all. I do have a handful of dishes from the past months that I managed to capture: Thai chicken meatballs, a Massaman curry with those same meatballs, roasted chickpeas with aubergine, a Palestinian carrot cake with rosewater cream and pistachios, coconut water chicken, Thai peanut salad, broccoli mac & cheese, slow-cooked shredded beef chili, marinated feta, stuffed peppers, sweet potato fries, fennel & white bean chorizo stew, peanut butter fish curry… the list goes on.

Anyway—I think I’m back. My photography schedule has calmed down to a few shoots a week, and these wintery days are making me feel cozy and ready to cook again, glass of wine in hand and music in the background.

Is any body else also feeling cozy and wintery and in the mood to just stay in and cook?

Rendang Ayam Padang – Coconut Chicken Rendang! If Rendang Ayam Padang – Coconut Chicken Rendang! If you know me at all you know I’m nuts about Indonesian food. We’ve been there on many travels and mainly the food keeps bringing us back. Rich, bold, spicy, packed with flavor—Indonesian cuisine just hits different. Every bite feels like a perfect balance of heat, sweetness, and deep umami.

This is a Padang style chicken rendang, originally from West Sumatra. I usually make beef rendang, slow cooked beef in a thick coconut gravy. Yum! but when you’re in a bit of a time squeeze chicken rendang is a great alternative and oh so tasty! With a few basic Asian ingredients in your pantry or freezer you can easily create this dish on any week day.

About this site

When looking for recipes online no one likes long unrelated texts explaining what happened that day at work, or how the cat is doing. This is a website solely for recipes and inspiration about food. I aim for my recipes to be accessible, to the point and enticing. I will dive into simple techniques and recipes but also verge out and try some Michelin star dishes now and then, because, why not? Of course I will also let you know if something didn’t really work out and how I tried to fix it.
