Slow Cooked Chili con Carne Homemade Tortilla Chip Slow Cooked Chili con Carne Homemade Tortilla Chips

A big bowl of steaming goodness, spicy, fragrant, packed with vegetables and served with crunchy spiced tortilla chips. Yuhum! This stuff is goooood. 

This is such a great dish to make from scratch, please don't use pre-mixed store bought spice mix for this. If you have basic spices in house like paprika, cumin, garlic powder, onion powder and oregano you have all your need. A pinch of smokey paprika is also a nice addition, but not a must. 

The chips I made from whole wheat tortillas, tossed in olive oil, paprika, onion powder, pepper and salt and then toasted in the oven for 10 minutes until browned an crunchy.

Thai Green Curry from Scratch Ok, ok, definitely Thai Green Curry from Scratch

Ok, ok, definitely not my best pictures. It was late, getting darkers and I'd just had a G&T, but definitely one of the best curries I've made in a while. Inspired by the amazing @recipe_tin of course. 

The green curry paste is packed with fresh ingredients and other spices like koriander roots, galangal, ginger, lemongrass, Thai green chilis, garlic, lime juice, dried shrimp paste and more. 

Blended into a smooth paste and then sautéed until fragrant and the juices have evaporated. I made it with aubergines, mushrooms and chicken. I also added potatoes, not really authentic but we love potatoes in curries!

So I'll def need to make and photograph this again (I don't think Rob will mind ;-) but in the meantime I still wanted to share the recipe with you!

My take on a leek tarte tatin. Leeks caramelised in balsamic vinegar, dijon mustard and honey on top of a flakey puff pastry crust. Studded with salty and creamy feta, torn mint leaves and a drizzle of extra honey on top. Yes, you read that right, this is a dish made in heaven. Such a great combo and a stunning end result. I served this with a balsamic glazed beets salad, a great combination!

If there’s one thing you need to make this weekend it’s these Palestinian Fish Kofta’s from the amazing cookbook Falastin. Packed with fresh herbs and spices, these little parcels of goodness are great as a snack, a starter or part of a mezzo meal. Serve warm on chilled yoghurt, you’ll thank me later, I promise. 

These little kofta’s are first pan fried to get some colour and then finished off in the oven for a few minutes until perfectly cooked. Great to make ahead of time and also delicious to eat the next day, We devoured them straight from the Tupperware container for lunch the next day. Soooo good!

Creamy Lemon Butter Beans with Roasted Chicken and Creamy Lemon Butter Beans with Roasted Chicken and Courgette

HOT! Even though it’s crazy hot in Amsterdam at the moment I was really in the mood for roasted chicken and veggies. The heat of the oven didn’t really help with the heat in our home, but oh well. We did get an amazing meal out of it.

Half of the butterbeans are pureed together with caramelised onions, garlic and celery and for extra flavour some lemon zest, cream, a bit of stock and pepper and salt. Once smooth and creamy I added it back to the pan with the rest of the butter beans.

In the meantime I roasted chicken thigh and courgettes until the chicken skin was crispy and the garlicky courgettes were soft and luscious. Enjoy!

A great little make-ahead appetizer which is put together within 15 minutes. What a tasty little dish! The earthy romanesco goes so well with the ansjovis, At first glance it might feel that that ansjovis will be overpowering, but it adds just the right amount of salty notes and blends in amazingly with the romanesco. Truly delicious.
I love going to the farmers market on Saturdays, I always come across (and buy) way too many things. But that taste is just so much better!

There’s a great little bread stall on the Noordermarkt in Amsterdam, I was looking for a baguette to make these bruschetta but then I this amazing focaccia caught my eye: shiny and crunch crust, studded with rosemary and salt flakes and amazingly puffy! So… no bruschetta from baguette tonight, but from toasted focaccia instead! But feel free to use the bread you like of course 😉

The recipe is from the cookbook Venice from the chef Russel Norman (owner of Polpo). I used Romanesco instead of Broccoli, but it will taste pretty much the same.

Aubergine & Mint Bruschetta - the perfect summer a Aubergine & Mint Bruschetta - the perfect summer appetizer

Ok, so this Aubergine & Mint Bruschetta might just be one of my favourite bruschetta recipes E V E R. It’s also one of the first BBQ dishes I ever made that I felt properly proud of – I still remember being blown away by how simple it was, yet so flavourful. This one’s inspired by a @jamieoliver recipe and it’s an absolute keeper.

The magic starts with grilled aubergine, either cooked over the BBQ or in a grill pan. Once tender and smoky, it’s marinated in a punchy dressing of olive oil, white wine vinegar, mint, parsley, garlic, salt, and pepper. It’s fresh, tangy, herby, and full of flavour.

Piled onto slices of freshly grilled bread rubbed with garlic, the juices soak into the crusty base and turn it into something honestly a bit irresistible. Serve while still warm, or prep ahead and serve cold – it’s just as tasty either way.

You can easily swap the aubergine for courgette, or try with roasted peppers or thinly sliced fennel. Even broccoli or cauliflower would work if you slice them nice and thin.
