Fennel Sausage in a Tomato, Fennel & Parmesan Broth with White Beans and Cavolo Nero

A lovely Italian brothy soup filled with veggies and packed with flavour, amazing with some toasted bread to soak up the juices. I used an parmesan rind which I stored in the freezer to simmer along on the broth for just that extra umami touch.

I used cavolo nero but kale would work fine as well.

Can’t find fennel sausage? No worries, just use regular pork sausage and fry these along with some fennel seeds, the seeds will go all nice an toasty and give amazing flavour!

Miso Butter Onions With just 4 simple ingredients

Miso Butter Onions

With just 4 simple ingredients (onions, white miso paste, butter and water) these onions are transformed into little bite size parcels: silky smooth texture, umami flavours, caramelized undertones, charred goodness. It’s really ridiculuous and absolutely decadent.

The ingredients are simple, but it does take a bit of effort: first cook the onions, cut side down and covered with aluminium foil in the miso butter sauce for 25 minutes at 240°C. Then remove the foil, flip the onions and continue to bake for ± 45 minutes, basting well with the sauce every 10 minutes. Then you’ll have a dish fit for the gods!

I served it with simple grilled chicken filets (recipe to follow), grilled bimi and some baked potatoes to soak up the amazing gravy. @ottolenghi you did it again!

Slow Roasted Rosemary Garlic Lamb Shoulder

Soft and juicy meet with a herby and crispy fatty layer. This slow roasted lamb shoulder is so super easy to make, but oh so good. Bon't let the simplicity of the recipe fool you, the flavours and texture and just the overall dish will make you go WOW!

The lamb is roasted for over 3.5 hours and the juices leak into the onions and garlic at the bottom of then pan which form the base of the BEST gravy I've ever tasted. Served with crunchy roasted potatoes and some simple veggies, you've got one hell of a crowd pleaser!

20 minute Puttanesca

Saucy stewed tomatoes with onions, garlic, red peppers, olives, capers, anchovies, fresh basil and a drizzle of virgin olive oil. Man oh man, you need this dish in your repertoire if you're looking for something packed with flavour, super healthy and very easy to make with just a few simple pantry ingredients!

Ingredients for 2 ppl:
2 tbsp olive oil + more to drizzzle
1 onions, finely chopped
3 garlic cloves, thinly sliced
1 can chopped tomatoes (or 4-5 fresh)
1 red pepper, sliced into strips
1 small tin anchovies in oil (use half a tin if you like it less fishy, I LOVE anchovies)
2 tsp dried oregano
± 1/2 cup black olives (depitted)
2-3 tbsp capers,
Pepper & Salt
1/2 tsp sugar
Fresh basil or oregano to serve
Pasta of choice

Method:
Heat the olive oil in a sauce pan.

Add the onions, garlic, oregano and a pinch of salt and sauté for 3 minutes until fragrant.

Pour in the whole can of anchovies including the oil, stir with a wooden spoon to break it down.

Add the canned tomatoes, half a can of water and the sugar.

Let simmer for 10 minutes, then add the capers and olives.

Let simmer for another 5 minutes until slightly reduced, taste and season with peper and salt.

Serve with al dente pasta of choice (gnocchi is great too), tear in some fresh basil or oregano and drizzle with a good glug of olive oil. Enjoy!

Chicken Roti is a staple dish in our household. The luscious curry sauce is full of flavour and spiced up by cooking a whole Mme Jeanette along with the sauce. But be careful to not burst it open while stirring or it might become too spicy to eat 😉

For a little extra heat I always serve it with a Mme Jeanette pickle, which gives just the right sweet, tangy spiciness to the dish..

Moroccan Spiced Chicken Soup with Dried Apricots, Bulgur and Chickpeas

A warming and hearty soup with Middle Eastern flavours and a touch sweetness from the apricots to balance it all out.

Quite a few years ago, before I actually knew how to cook, I had a soup at a restaurant (which now no longer exists). I was blown away by the flavours and never had anything like it before or after.

A while ago I was pottering around in the kitchen and made a no recipe Moroccan spiced chicken soup , I just added ingredients which I felt would work together. It wasn’t until I tasted it that I recognised this as the soup I’ve been looking for all these years!

The problem with cooking with no recipe is that it’s easy to forget what I actually did and the ingredients I used, so I wrote them down the same night. Phew!

Note before you get started: this soup is ready in about 50 minutes but even better if you have time to let it rest for an hour or 2 so the bulgur can soak up all the stock and all the flavours can marry together. Even better the next day!

Pan Fried Tilapia with Tomato Salsa

Tomatoes are definitely one of my go to ingredients: roasted, stewed, fried, sliced, blitzed, chopped, or in this case: salsa-ed. Their sweet & tangy flavour combined with just a few simple ingredients like olive oil, pepper, salt and some fresh herbs bring these red jewels to life in an instant.

I served this together with crispy smashed potatoes, a simple salad on the side and harissa mayo. Super simple and tasty.

Soy Glazed Aubergine & Saucy Chicken Stirfry

Yessss these aubergines were soooo good. Charred crispy skin surrounding silky soft goodness. The scored aubergine flesh soaked up all the lovely soy glaze.

Aubergines from @plukcsafruittuin

Ingredients:
1 aubergine
2 tbsp vegetable oil
Sesame seeds
Spring onions, finely sliced

Sauce:
2 tbsp light soy sauce
1 tsp sugar
1 tsp sesame oil
1 tbsp miring
1 garlic clove, minced
1 tsp cornstarch
60 ml cold water

Method
For the sauce add all the ingredients into a sealable jar or small bowl and mix well until combined, set aside.

Slice the aubergine into 1 cm thick slices. Score one side of the aubergine slices into tiny squares.

Heat the oil in a frying and add the aubergines, scored side down. Let it fry on medium - high heat on this side until slightly browned, no need to move the around.

Flip the slices and continue to fry and brown on the other side, add more oil if you need.

When both sides are nicely browned (this will take about 5 minutes on each side) pour in the sauce and shake the pan. The sauce will thicken quickly. Add a drop of water init’s too thick.

Turn the heat down, flip the aubergine slices a few times so the slices are well coated and the sauce soaks into the scored side. Let it bubble away for a minute on low heat.

Serve with sesame seeds and spring onions sprinkled over the top, as is with white rice or as a side dish to a stir fry like I did.

Harissa baby! Such a flavour bomb! An I love that fiery colour! This is a no fuss dinner recipe, but still with a bit of a wow factor. While the potatoes and vegetables are baking the fish is tossed in a harissa lemon marinade and added to the oven for the last 10 minutes to cook through. No mess, no fuss, but full of flavour!

Courgette, Broccoli, Ricotta & Mint Pasta Bake

A super easy one pot dish, inspired by a recipe from @donnahay ‘s cookbook ‘One Pan Perfect’. One thing I’ve learned over the past summers is that courgettes grow like crazy in the summer! It starts with a little flower and in the blink of an eye you have a courgette! (Same goes for cucumbers by the way).

I only had 1 tub of ricotta, usually I would use 2 but this works fine too for a lighter version. The filling consists of courgette, Swiss chard, broccoli, ricotta, mint, lemon zest, mozzarella, parmesan cheese and some crispy smokey bacon for extra flavour.

Potato & Cabbage Chowder with Smoked Fish

It's happening, the days are getting colder, although we do still have some hot days coming up. But hearty soups are on my mind and this is one of those.

A thick and creamy chowder crowded with savoy cabbage, potatoes, leeks and carrots (all from @plukcsafruittuin ) studded with warm smoked mackerel. So so good!

Yessss these aubergines were soooo good, I wish I had made more! Stupid, because I had more aubergines in the fridge!

Aubergine & Beans in the Stir Fry from @plukcsafruittuin

Ingredients:
1 aubergine
2 tbsp vegetable oil
Sesame seeds
Spring onions, finely sliced

Sauce:

Silky Smooth Fennel & Potato Soup

When harvest at @plukcsafruittuin gives you fennel and potatoes, well then I have to make this soup at least once!

Ingredients:
1 tbsp butter
1 tbsp olive oil
1 onions, finely chopped
1-2 garlic cloves, finely chopped
1 large or 2 small fennel bulbs, green fronds separated. White part finely sliced
300 g potatoes, peeled and cubed
500 - 750 ml water
1 stock cube, chicken or vegetable
Pepper & Salt to taste

In a large sauce pan melt the butter and heat the olive oil. Once foaming add th onions, garlic and white parts of the fennel. Let it sauté on low heat, without letting it brown, until softened. You need some patience for this, ± 15 minutes. If it's all a bit too dry add a splash of water in between, but most important is not to let it brown.

Add the potatoes and top off with just enough water to submerge the potatoes, they can be sticking out here and there. You can alsway add more water later on. Crumble in the stock cube ane let simmer for 15 minutes until the potatoes are cooked through.

Remove from the heat and blend with am immersion blender until smooth, add some water if needed to get your desired conistency, I like mine quite thick and silky. Taste and season with pepper and salt.

Serve with some of the fennel fronds over the top, a drizzle of extra virgin olive and some fresh crusty bread.

Brie & Tomato Puff Pastry Tarts with Honey & Thyme

A lovely little weekend lunch or snack made in a jiffy. Oozy, gooey cheese, charred tomatoes and sweet honey, what a combo!

- Preheat the oven to 220°C.
- Defrost your puff pastry squares, any amount you'd like to eat.
- Fold over the edges, score the edges with a fork and brush the edges with some egg wash.
- Divide a few slices of brie, tomato and some thyme into the squares, keeping edges free.
- Bake in the oven for 15 - 20 minutes until golden bubbling.
- Serve with a drizzle of honey over the top.

Lemon Chicken Shoarma

Ok, I know, not real shoarma, but my healthier version of shoarma. And the star if the show? Roasted lemon! This is my new addition, roasting, grilling or pan frying lemon until charred and caramelized and then squeezing out the juices. So so good!
