This, my friends, is a match made in heaven. Grilled Asparagus, Poached Egg, Melted Butter & Parsley, yuhum!
There’s something so simple, so effortless, and yet so elegant about this dish. It’s one of those combinations that proves less really can be more—just a few fresh, quality ingredients, each one playing its part to perfection. The asparagus, grilled until slightly charred and smoky, brings a beautifully earthy depth. Poached eggs with their gooey, golden centres add luxurious creaminess. Then, enter the melted butter, warm and silky, pulling it all together in the most comforting way. Finished with a scatter of fresh parsley and a crack of black pepper, this is truly spring or summer on a plate.
I love serving this dish as a weekend brunch, a light lunch, or even as a starter for a laid-back dinner party. It’s quick enough for a weeknight, yet special enough to impress guests. Plus, it’s endlessly adaptable—use green or white asparagus, swap in chives or dill for parsley, or add a sprinkle of Parmesan for extra richness.
And the best part? It comes together in under 15 minutes if you prep ahead. Honestly, once you try this combo, it might just become a staple.

Can I make this ahead of time?
You can blanch the asparagus ahead and even pre-poach the eggs. Reheat the asparagus quickly in a pan or oven before serving.
Can I use green asparagus instead of white?
Absolutely! Green asparagus doesn’t need blanching—just peel if thick, oil lightly, and grill directly.
Can I make this dairy-free?
Yes—skip the butter or use a vegan alternative. A drizzle of olive oil with lemon zest also works beautifully.
What’s the best way to poach an egg?
Use fresh eggs.
Step 1: bring a large pot of water to a rolling boil then turn down the heat to a simmer.
Step 2: break an egg into a cup and gently slide it into the water. As soon as the whites start to turn colour, slide in a new egg, working clockwise. Repeat withe amount of eggs you want.
Step 3: When the last egg is in turn off the heat and put the lid on the pan.
Step 4: Set the timer for 4 minutes for medium soft eggs.
Step 5: Remove the egg you added first to the pan with a slotted spoon and let drain on kitchen paper. Repeat with the rest, working clockwise.
