A few FAQ’s for you!

Can I use dried Verveine instead of fresh?
Yes, you can! Dried Verveine (lemon verbena) works beautifully—just use about one-third of the amount you’d use for fresh, as it’s more concentrated. Steep it a bit longer to bring out that lovely citrussy flavour.

What’s the best way to make rosemary infused honey?
Simply heat runny honey gently with a sprig or two of fresh rosemary, then let it steep until cooled. Strain it if you prefer a smooth finish. This adds a subtle herbal sweetness that pairs wonderfully with Verveine.

Can I make this iced tea ahead of time?
Definitely. Brew the tea and mix it with the rosemary honey, then chill it in the fridge. Add the sparkling water just before serving to keep it bubbly and fresh.

Is this recipe suitable for children or during pregnancy?
This caffeine-free iced tea is made with herbal ingredients and contains no alcohol, so it’s generally suitable. However, if you’re pregnant or serving it to young children, check with your healthcare provider as some herbs (like rosemary) should be consumed in moderation.

Can I turn this into a cocktail?
Absolutely! Add a splash of gin, vodka, or elderflower liqueur for a simple botanical cocktail. Garnish with lemon and rosemary for a stunning summer serve.

What other herbs work well in this iced tea?
If you can’t find Verveine, try lemon balm, mint, or chamomile for a similar soothing, herbal iced tea experience.
