The Brie melts into a rich, creamy center, while the puff pastry turns beautifully crisp. And that cranberry compote? Sweet, tangy, and just the right amount of tart. Ingredients

  • 1 large sheet puff pastry (or 9 small squares), defrosted (see notes)
  • 1 wheel of brie or camembert
  • 1 tbsp cranberry compote (any compote or chutney will work)
  • 1 egg, whisked
  • 1 tsp nigella seeds (optional)
  • 1 tsp fennel seeds (optional)

Instructions

Preheat the oven to 200°C.

Roll out a large sheet of defrosted puff pastry or attach 6 small squares.

Lay a circle of brie or camembert in the middle. Top off with some cranberry compote and fold all the sides over to make a sealed package.

Brush the puff pastry brie package with whisked egg and, if you like, sprinkle some flavourings on top. I used nigella and fennel seeds.

Bake in the oven for 40 - 45 minutes until nice and golden and crispy.

Let rest for 5 minutes before serving. Serve with a simple fresh salad.
