Baked Cheesy Chicory

Baked cheesy chicory, or witlof in Dutch, is a classic Dutch vegetable side dish. Chicory is one of those veggies that as a kid I didn’t like much, too bitter and strange texture.
Now I love it! It’s great eaten raw with a good veggie dip, or like my friend Alice likes to make them with olive oil, lemon juice and loads (and I mean loads) of raw garlic sprinkled over the top. Or try this salad: Simple Chicory Salad with Apple and a French Shallot Vinaigrette


This baked cheesy chicory version is totally different, but definitely a Dutch classic. You can also add ham, but I forgot to get it, luckily this vegetarian version is just as good.
Baked Cheesy Chicory (Witlof in Dutch)
Ingredients
- 5-6 chicories
- 10 slices of mature cheese
- 10 slices of your favourite ham (optional)
- Nutmeg
- Pepper & Salt
- Parsley (optional)
Instructions
Preheat the oven to 180°C.
Remove the outer leaves of the chicory.
Add them to a pan with boiling salted water and cook for 5 minutes.
Carefully remove them from the pan and let them cool slightly.
Remove the bitter hart by cutting a V from the bottom.
Try to keep the rest of the leaves together.
Wrap them in cheese and if you like some ham (ham first then cheese).
Grease a baking dish.
Lay the chicory parcels next to each other, but don’t let them touch.
Sprinkle some breadcrumbs over the top and a good grating of nutmeg.
Bake for ±20 minutes until golden and crispy.
I like to finish it off with some crushed black pepper, salt and if you have it, some parsley.
